Sometimes life calls for comfort food and if you can make a healthy and gluten-free version, all the better! Below are a couple of recipes I created for just the occasion.
To make the salad:
Romaine Lettuce
Cucumber
Tomatoes
Scallions
Basil
Roasted Turkey
Pepperoncino
Parmesan Cheese
*Use Organic Ingredients when possible
Finely chop the lettuce, basil, cucumber, tomatoes and scallions in a large salad bowl. Add the garbanzo beans and toss with the dressing.
To make the dressing:
1/4 cup Extra Virgin Olive Oil
1/4 cup Red Wine Vinegar
1 tsp. Dijon Mustard
1 Tbs. Chopped Shallots
1/2 tsp. Dried Oregano
1/2 tsp. Italian Seasoning
Sea Salt and Freshly Ground Black Pepper to taste

Place the shallots in a blender to chop. And the remaining ingredients and puree until blended. If you don’t have a blender available, you can finely chop the shallot and then combine the remaining ingredients with a fork until combined.
Plate the salad and top with the finely chopped peperoncino and grated Parmesan cheese.
To make the pizza:
Gluten Free Bread (I used Food for Life: Gluten-Free, Yeast-Free: Brown Rice Bread)
Pizza Sauce
Mozzarella Cheese
Finely Chopped Basil
Sliced Roma Tomatoes
Olive Oil
Parmesan Cheese (optional)

Spread a thin layer of pizza sauce on each slice of bread.
Add a slice of the mozzarella cheese to one piece of the bread for each sandwich. Top with the sliced tomatoes and basil and grated Parmesan if desired.
Coat the outside of the bread with olive oil (you can use a pastry brush or just dip it in a plate of olive oil) and place on a preheated sandwich grill. Cook until the cheese is melted and the bread begins to turn a light shade of brown.
Slice in half to serve.
Alternatively, you can make open faced pizzas and bake them in the oven at 375 degrees until the cheese is melted. Nom nom.
