With baking all the rage this year, I’m so excited to share this Gluten-free Chocolate Chip Scones recipe that is on serious repeat in my kitchen lately! While Mister Pretty Little Shopper is more of a cookie, cake and ice cream lover, than a High Tea connoisseur, he surprisingly loved these scones and eagerly gobbles them up as soon as I make them.
The recipe is very similar to my Lemon Blueberry Scone recipe and I’ve also included a gluten and dairy-free version. While the gluten-free batch has a flakier scone like taste and texture, the gluten and dairy free version is a bit moister. Regardless they’re both absolutely scrumptious and will please event the pickiest of eaters (like my hubby). 🙂

Method:

Preheat the oven to 365 degrees. Line a baking sheet with parchment paper.
Sift the flour and add in the sea salt, baking soda and baking powder. Fold in the frozen grated butter using a whisk or wooden spoon. In a separate bowl, lightly beat the egg. Whisk in the honey, vanilla and sour cream and mix evenly.
Combine the wet ingredients with the dry ingredients. Fold in the chocolate chips and shape the batter into 2 round and flat pancake shape discs about 3/4 inch in height.
Place in the pre-heated oven and bake for about 15 minutes, or until lightly browned on top.
Remove from oven and let cool for a few minutes. Slice each disc into 8 mini scone wedges. Makes 16 mini scones.
Serve immediately, or store in an air tight container and consume within 5 days.

The recipe makes 2 “round flat pancake shape” each cut into 8?
It doesn’t say to make 2

I would appreciate the gluten-free and the dairy free recipe. Do you realize that rhymes.
    Thank you,
